Portobello Mushroom Pizza

With my wedding fast approaching, I am making an effort to look lovely and slender in my gown, but I certainly don't want to deprive myself...wouldn't dream of it!  Eating mostly vegetables and protein at dinner time is an easy way to keep your tushy in check.

Enter the Portobello Pizza!
For two servings, you need:

2 large portobello mushrooms de-stemmed
organic mozzarella cheese
2 small tomatoes
3 garlic cloves
two dashes dry basil or 3 to 4 fresh leaves chopped
pinch chili flakes
salt and pepper

To make tomato sauce:
Dice tomatoes and mince garlic.  Heat some olive oil in a sauce pan with chili flakes and add garlic. Saute garlic for a minute and add tomatoes, basil, salt and pepper.  Cook the tomatoes until very tender.  Remove from the heat and blend everything together with an immersion blender or regular blender/food processor.  


Preheat oven to 350 degrees.  Rub the portobellos with a little olive oil and place on a foil lined sheet tray.  Top the mushrooms with tomato sauce and cheese.  Bake until the cheese is bubbly, about 15 minutes.  Super easy, very quick, and undeniably delicious.  I ate mine with a simple salad and a little tofu.  A perfect dinner for my taste buds and my wedding dress!
