Peanut Butter, Goji Berry, Cacao Nib Oat Bars!

I only teach one class on Thursdays, so this has become my day to create.  I splurged on a big bag of goji berries, came home and made these filling, healthy treats.  I love having healthy bars and muffins on hand to eat for breakfast or to put in my bag to snack on later.  Goji Berries are the most nutritionally dense food on Earth.  They contain all the essential amino acids and have the most protein of any other fruit.  Gojis are loaded with iron, vitamin C, and fiber.  They truly are miraculous little gems, and that is why you may sweat a little when the cashier tells you your total, but fear not, you are investing in your health!

2 1/2 c oats
1/2 c peanut butter
1/3 c goji berries
1/3 c cacao nibs
1 1/2 Tbsp. chia seeds
1/2 c shredded un-sweetend coconut
4 dates chopped into small pieces
2 1/2 Tbsp. honey (or agave)
2/3 c coconut milk (or whatever milk you like)
2/3 c apple sauce
2-3 dashes of cinnamon
large pinch of salt
coconut oil

Preheat oven to 350 degrees.  In a small saucepan, melt peanut butter and honey into coconut milk over medium-low heat and set aside. In a large mixing bowl, combine oats, gojis, cacao nibs, chia seeds, coconut, dates, cinnamon, and salt.  Stir peanut butter sauce and apple sauce into the mixture.  Grease a small baking dish with coconut oil, and pour the mixture into the pan. Bake for 25 minutes, or until the top is golden brown.  Let cool and slice into bars.  yum!
