When the Moon Hits Your Eye...


Two weeks from today, Dylan and I will be boarding a flight for Europe; yoo hoo!  Four nights in Paris and five nights in Positano on Italy's Amalfi coast.  Mama Mia!   In honor of our trip, I thought that we should stay in and be very Italian...makea da pizza, drinka da wine, talka with oura handza, and of course watch Marissa Tomei and Robert Downy Jr. sweep the Italian coastline in search for Damon Bradley.


  Marisa Tomei's outfits alone make this movie worth watching.   Dylan was less than thrilled with my movie choice, but the promise of cheese and wine was enough for him to deal with a little Rom Com.  After all, it was thematically appropriate.

We bought a gluten free pizza dough mix, and I made a pie with pesto and veggies while Dylan took on the classic margarita.


Dylan's Tomato Sauce is perfect every time!  

1 28 oz. can whole San Marzano Tomatoes
half a medium red onion chopped
3 garlic gloves roughly chopped
pinch red pepper flakes
6 fresh basil leaves chopped
salt to taste

Blend tomatoes in a blender or with an immersion blender (Dylan thinks the sauce is tastier when you buy the tomatoes whole and blend them yourself).  Saute onions in olive oil until translucent and add garlic and red pepper flakes.  Add the blended tomatoes and simmer for 20 minutes.  Add basil and salt at the end. 

To our amazement, The Veggie Pesto Pie was tastier than the one with cheese! 

It starts with a pizza crust of your choice.  

Slather it in my vegan pesto


Cover it in thinly sliced veggies.  I chose zucchini, eggplant, tomato, and spring onions.



 Drizzle the pie with olive oil, sprinkle with salt and pepper, and bake for 15 minutes at 450 degrees.
