June 7th


A summer birthday is a beautiful thing, the great outdoors can be your venue, and if you're us, your great outdoors is Central Park.  There are no reservations or capacity issues; it's a perfect place to gather, lounge, eat and drink. We arrived around 1pm hunched over with bags and coolers, chose a shady spot to spread our enormous quilt (made by Dylan's grandmother), and waited for our friends to trickle in.  It was a gorgeous summer saturday to ring in the last year of my hubby's twenties.



I made Chocolate Chip Pretzel Bars.  They were crunchy, delicious, and super satisfying.  Dylan loves to crunch up pretzels in his ice cream, so I figured he would like these..... I wasn't wrong :)



I got the recipe from Food and Wine.  You should make it!

I also made a Greek Pasta Salad.  The recipe is my own, and I think its pretty delicious.


Ingredients:
2 12 oz. bags of penne, fussili, or bow tie pasta
1 1/2 c chopped cucumbers
1 1/2 c chopped tomatoes
1 1/4 c pitted black olives halved
1 c feta cheese

Dressing:
1/3 c olive oil
1 Tsp. honey
3 Tbsp. lemon juice
pinch salt and pepper
